In 1977 Jim owned a Mexican restaurant called The Taco Shop in Lakewood, a suburb of Denver, Colorado. Jim’s green chili recipe originated there. He decided to smother burritos with his green chili, and it was a huge success. One night sitting around with best friends in Chattanooga, they brought up the idea of going in together and starting a food truck business. First the idea was an Airstream, then Jim searched online and found a little bus, he decided he would fly out, pick it up, and drive it back to Tennessee. He wanted to serve burritos. Jim knew it would be something fun! He wanted to work for himself again, and so the California Smothered Burrito was born. Working with a good friend Jim came up with a logo, and the bus was fitted with a sign and a surfboard. But most importantly, Jim created a great menu full of fresh ingredients. Today Jim is serving in Chattanooga, and he is building a great reputation already, with repeat customers.
